1 packet Mum's Magic Mutton Curry Premix
500g mutton
1 tablespoon oil (for pressure cooking)
¼ teaspoon turmeric
1 teaspoon salt
500ml water (for pressure cooking)
4 tablespoons oil (for curry base)
100g tomato puree (or puree of 1½ tomatoes)
100ml water (for premix paste)
Fresh coriander for garnish
1. Pressure Cook the Mutton:
In a pressure cooker, add 1 tbsp oil, ¼ tsp turmeric, 1 tsp salt, 500g mutton, and 500ml water.
Mix well, then cook for 5–6 whistles until the mutton is tender. Reserve the stock for later.
2. Prepare the Premix Paste:
Mix 1 packet of Mum's Magic Mutton Curry Premix with 100ml water. Stir well to make a smooth paste and set aside.
3. Sauté the Tomatoes:
In a pan, heat 4 tablespoons of oil. Add 100g tomato puree (or puree of 1½ tomatoes) and sauté until the oil separates from the masala.
4. Make the Curry:
Add the premix paste to the pan and sauté for 1 minute.
Then add the cooked mutton and 500ml of the reserved mutton stock.
Stir well, sprinkle chopped coriander, and cook for 2 more minutes.
5. Serve Hot:
Your delicious Mutton Curry is ready!
